LIFE. FOOD. PLANNING


Up until 9 days ago i have lived in the city.  I LIVED a crazy busy life.  I went from university to work,  back to university AND then home to do homework and planning.

So why am I telling you this?!  WELL ---  a busy life MEANS finding a balance of how to eat, when to eat and what to eat!

I had to come up with ways of eating healthy even though I was ALWAYS on the go!  FOR almost two years I I got into a SERIOUS routine!  Here is what I ate:

I planned for Monday - Friday.

Breakfast:  Shakeology and a fruit

Morning Snack:  over night oat -  1 cup 0% MG plain greek yogurt, 1/6 cup steal cut oats, 1 tsp honey

Lunch:
- chicken tacos wrapped in lettuce
- sandwich
- eggs (I had an egg cooker at work)  Sometimes I put my eggs on rice cakes!

Afternoon Snack:
- fruit (1 cup)
-veggies (1 cup)

Supper:
-eggs
-stir fry
-chili
- chicken breast, veggies, and rice
-chicken burger (clean chicken breast, half a bun, lettuce, cheese)
-chicken fresh rolls


Evening Snack
-veggies
-tea

NOW that I live at home with my hubby I am going to have to learn how to cook for TWO.  MY goal is to help him lead a healthier life.

I start my internship tomorrow which means I will be BUSY again!  BUT this time it isn't just me that I need to think about!!! The health of Tyson is SUPER important to me.  SO this week I am trying out some new things!  Today I am making stir fry for supper and then we will have it for lunch tomorrow too!

BUT I started thinking WHAT ABOUT THE REST OF THE WEEK!  So here I am trying something new!!!  I am cooking in the SLOW COOKER so we have supper tomorrow when I get home!  WE then will have for the following day too!  OR maybe we will have it for lunch!!! I GUESS we will see when we want to eat it!!!


Here is the recipe:

1 round beef roast
2 cups of beef broth 
sprinkle of Italian spices
1 tsp onion powder
2 tsp garlic powder
pepper and salt to taste
3 large potatos
2 cups of carrots

Cook on low for 7.5 hours!

  1. Looks yummy :) As the days get cooler here in Winnipeg, I will be trying some warm, healthy, comfort food in my crock pot!
